Using my seasoned cast iron skillets, I made a delish meal for the family. Skillets go between the stove top to oven well and are perfect for quick and healthy single pan creations. I love making pot roast in them! I over cooked mine a bit and added a great deal more herbs and spices and they were delish.
Ingredients
- 1 tablespoon unsalted butter or oil
- A few ounces of caramelized onions, peeled and thinly sliced (amount based on personal preference)
- 1 teaspoon of honey
- Spinach Frozen or fresh (amount based on taste, put as much or as little as you like)
- 5 ounces of shredded or crumbled cheese (Feta, goat, Swiss, or other)
- 4 large eggs (up to 8 large for a fluffier frittata)
- 8-inch or larger (depending on amount of eggs and ingredients) seasoned skillet
- salt, nutmeg, and pepper to taste (optional)
- You could also add mushrooms or other appropriate veggies and I added smoked salmon to my frittata
Instructions
- Place the skillet on a medium heat and melt the butter.
- Preheat your oven to 375°F/190°C.
- Add onions to the skillet, and optionally add honey and season. Stir occasionally to brown evenly.
- While the onions are caramelizing, boil a saucepan of water.
- Tear the raw spinach leaves into bite-size pieces.
- Submerge the spinach (or other veggies) in the boiling water for a few minutes and then remove it from the saucepan and drain in a colander, or just remove the greens from the saucepan with a slotted spoon. You could also sautee leafy or frozen greens with onions after caramelizing
- When the onions are browned and caramelized (about 10 minutes or so), turn off the heat.
- Blend the eggs, cheese, and semi boiled greens (and optional salmon or bacon) in a bowl with some salt, pepper, and nutmeg to taste.
- Pour the egg mixture over the onions (if you sauteed your veggies with the onions you would just pour the egg mixture over).
- Place the skillet in the oven and bake for 10 minutes or so, or until the frittata is firm and slightly browned on top. If you’re using more than 4 eggs, it will take 5 to 10 minutes longer to fully bake.
- Cool and enjoy!
