These utilize organic pre-packaged chocolate cake mix, organic cook pudding and Ghiradelli premium baking semi-sweet chocolate. Just because I am an ingredient snob does not mean Pillsbury, dove and jello brand would not work well. Let me tell you this is like biting into the heart of chocolate heaven, this exceeds anything I have ever had in a restaurant!
Ingredients
- 1 box chocolate cake mix (I used an organic brand that did not include so many sketch chemicals and preservatives)
- 1 (approx 4 oz) box chocolate fudge pudding (I used an organic brand)
- 1 cup sour cream
- ½ cup coconut oil (veggie oil will work as well)
- ½ cup prepared, plain warm coffee
- 4 eggs
- 1 bag semi-sweet chocolate chunks
- 4 – 4 oz Ghirardelli semi-sweet premium premium baking chocolate bars (Dove will suffice)
- 1 cup sour cream
- Strawberries, ice cream or whipped cream
Instructions
- Preheat oven to 350.
- In a large bowl, whisk together cake mix and pudding mix until combined.
- Make a well in the center of the bowl.
- Add in the sour cream, coconut oil, eggs, and prepared coffee.
- Mix for 5 minutes or until completely combined. Finish by stirring with a rubber spatula.
- Fold in semi-sweet chocolate chunks
- Fill cupcake liners with batter.
- Bake for 16-18 minutes.
- Remove cupcakes from pan as soon as they come out of the oven.
- Thinly slice strawberries
- In a large bowl melt the milk chocolate candy bars in the microwave, stirring every 30 minutes until completely melted. The dove chocolate squares took 1 minutes and 30 seconds.
- Let cool until slightly warm.
- Garnish with desired toppings.
- Enjoy!
